1 handful of cilantro leaves
1 whole lime (squeezed)
2 jalapenos
1/2 cup slightly chopped onions
3 pickled artichoke hearts
1 tsp oil (we use oil from canned artichoke hearts at costco. See below for more info*)
1 cup Organic Salsa from Costco (or any of your favorite organic premixed salsas)
2 whole avocados
Tabasco to taste
In a food processor, combine cilantro, jalapenos, onions, lime juice and artichoke hearts. Pump until finely chopped, about 10 pumps. In a bowl add avocados, salsa and oil. Mash together until desired thickness, then mix in contents from the food processor. At tabasco sauce to taste for a little extra kick. Serve with organic corn tortilla chips and enjoy!
Drink pictured is crushed mint leaves, lime juice and sparkling water. Refreshing and Delicious.
*Costco sells canned artichoke hearts that are kept in canola oil (not organic). It gives a sweet taste to the guacamole. If you dont have canned artichoke hearts, use any organic oil (olive, sunflower or canola) and add a tsp of agave nectar.
