Hearty Cranberry Kale Salad with Citrus Vinaigrette

* use organic ingredients

2 cups chopped kale, stems removed
2 tablespoons cranberries
1 chopped carrot
1/2 of avocado
1/2 cup garbanzo beans
1/4 cup almonds, roasted, chopped






Roasted Almonds: 
Set oven to 400 ˚ F, let oven heat up for about 10 minutes, then spread 1/4 cup of whole almonds on a cooking sheet. Bake for about 6-10 minutes until noticeable browning. Set aside to cool. Once cooled, loosely chop with knife, chopper, or in food processor.


Citrus Vinaigrette


1 tablespoon citrus olive oil
(replacer: 1 tablespoon olive oil + 1/2 tsp pomegranate, orange, or other highly concentrated, potent juice)
2 tablespoons pomegranate vinegar (replacer: red wine vinegar or champagne vinegar)
1/4 tsp salt
Pepper to taste

Wisk vinaigrette together
Toss with salad

Serves 1, or as an appetizer for 2

Banana Flax & Spinach Smoothie

*use organic ingredients

1 cup of spinach
1 cup baby kale (or regular kale, stems removed)
1 banana
1 cup of Almond or Soy milk
2 tablespoons ground flax seed


Blend in blender with 2 cups of ice, serve over ice, or drink as is.

Avocado Hummus

* use organic ingredients

1 can of drained garbanzo beans (or chickpeas)
2 ripe avocados
1 cup, or bunch of cilantro, chopped
3 tbsp extra virgin olive oil
1 clove of garlic
Juice of 1 lime
up to 1 cup of water
1/2 tsp of salt
pepper to taste


Blend all ingredients in food processor, slowly adding water until smooth and creamy

Serves well as an appetizer with flatbread or crackers

Artichoke Hummus

* use organic ingredients

1 can drained and rinsed Garbanzo beans
1/2 cup of water
1/2 cup Artichoke hearts
1/2 cup juice of jarred Artichoke hearts
1 tsp Cumin
1 tsp All-Spice
2 tbsp chopped Basil leaves
1 tsp Garlic salt
1/2 tsp ground pepper


Blend in Food Processor until smooth.
Serve with Everything Flatbread, or any other flat bread or cracker.

Serves 8

BerryCocoa Smoothie

* use organic ingredients

1/2 cup frozen Raspberries
1/2 cup frozen Blackberries
2 tbsp Cocoa powder
1/2 Avacado
1 cup Soy milk

Blend thoroughly in blender

Serves 1

Tropical Fruit & Coconut Salad with Pomegranate Vinaigrette

* use organic ingredients

1 cup Spinach or Kale
1/2 cup Pineapple, chopped
1/2 cup Strawberries, sliced
1/2 cup Apples, sliced
2 tbsp unsweetened shredded coconut
2 tbsp Roasted Almonds, chopped or sliced

Serves 1



Pomegranate Vinaigrette

2 tbsp Olive Oil
3 tbsp Pomegranate Vinegar
1/2 tsp Agave Nectar
1 tbsp Fresh Orange or Lemon Juice
Salt & Pepper to Taste

Serves 1

Green Orangeberry Smoothie

* use organic ingredients
2 cups Spinach
1 cup Kale
1 cup Orange juice
1 cup Strawberries (fresh or frozen)
1 cup soy or almond milk
1 banana


Blend thoroughly in Blender

Serves 1-2

Fruit Salsa with Cinnamon Sugar Pita Chips

* use organic ingredients

Fruit: Approximately 6 cups worth
  Pineapple
  Thawed or fresh blackberries
  Thawed or fresh blackberries
  Orange slices
  Kiwi slices
  Apple slices
  Strawberry slices
  Mango slices
  And any other fruit you love!


Marinade:
  1/2 cup fresh lemon juice
  4 tbsp of your favorite flavored jam or preserves
  1 tbsp cinnamon
  2 tbsp brown sugar (light or dark)

Mix chopped up fruit with marinade. Serve with Cinnamon Sugar pita chips.

Serves many!


Fruit Splashed Pellegrino

* Use organic ingredients


2 Lemons, thinly sliced
3 Limes, thinly sliced
1 Apple, thinly sliced
30 oz of Pom Wonderful pomegranate juice
Pellegrino or other Sparkling water

additional fruit slices can include :
10 Mint leaves
10 pieces of Pineapple, sliced
3 Oranges, sliced

Marinade slices of fruit in pomegranate juice for at least 2 hours or overnight in the refrigerator.

Chill sparkling water


When ready to serve, pour sparkling water over ice and splash with marinated pomegranate juice.

Serves many!

Melon & Pineapple Citrus Juice

*Use organic ingredients

1/4 watermelon
1/2 pineapple
1 whole cantaloupe
4 inches peeled ginger
3 lemons
3 oranges

Cut all ingredients according to your juicers instructions, juice, chill and enjoy!

Creates a pitcher full



Mediterranean Watermelon Salad


* Use organic ingredients

2 cups of chopped Watermelon
1 cup of shredded Green Cabbage
2 large Tomatoes, cut into wedges
1/3 of Red Onion, thin sliced
1/2 large Cucumber, thinly sliced
1/4 cup of Basil Leaves, chopped

Mix ingredients together and toss with Red Wine Vinegar Dressing:





Red Wine Vinegar Dressing

5 tbsp red wine vinegar
4 tbsp extra virgin olive oil
1 tsp salt
1/2 tsp pepper

Serves 2-4 

Fruit & Veggie Summer Mix Salad



*Use organic ingredients

6 leaves of Kale, chopped and de-stemmed
2 handfuls of Arugula
1/2 Cucumber, thinly sliced
5 Carrots, chopped
5 Radishes, thinly sliced
1 large Tomato, cubed
1 cup of Purple Cabbage, chopped
2 whole Apples, thinly sliced
1 whole Mango, chopped into cubes

Mix all ingredients together, then top with Organic Cilantro Lime dressing, click below:

Cilantro Lime Dressing


Serves 4

Citrus Toasted Coconut & Almond Salad



*Use organic ingredients

6 leaves of Kale, chopped finely and de-stemmed
8 whole mint leaves, chopped
1 head of romaine, chopped finely
3 oranges, cut into edible pieces
1 whole grapefruit, cut into edible pieces

1/2 cup of slivered almonds
1/2 cup of shredded coconut



Toast almond and coconut in the oven for about 10 mins at 400 degrees (check on them occasionally and take out once they have started to brown)

After mixing all ingredients of salad together, top with toasted almond and coconut and serve with Honey Pepper Dressing, click below:

Honey Pepper Dressing


Serves 4-6

Orange, Papaya, & Pineapple Juice



*Use organic ingredients


Juice all of the following ingredients into a juicer, chill for about 2 hours until cool, or serve over ice.

1/2 papaya (hard to find organic unfortunately)
1 whole pineapple
10 oranges
5 inch piece of ginger for spice (optional)

Makes a pitcher full

Strawberry Salad with Honey Pepper Dressing


*Use organic ingredients


1 handful of Arugala
2 Kale leaves, chopped and de-stemmed
5 whole Strawberries, sliced
1/2 Avocado chopped
1 Apple thinly sliced

Combine all ingredients and toss with Honey Pepper Dressing
Serves 1



Honey Pepper Dressing

1 tsp Honey
2 tbsp Extra Virgin Olive Oil
4 tbsp Rice Wine Vinegar
1 tsp lemon juice
Salt and Pepper to taste


Place all ingredients in a jar and shake, or whisk in small bowl and drizzle over salad.
Serves 1

Veggie Stuffed Bell Peppers


*Use organic ingredients

4 whole bell peppers any color
2 cups of white mushrooms, sliced
1 whole zuchinni, chopped
1 whole white onion, sliced
5 garlic cloves finely chopped
2 large handfuls of spinach
1 whole tomato chopped
1/2 can of tomato paste
1/4 cup water
Olive oil




Over medium heat, add drizzle olive oil on a sauce pan and add in chopped garlic and sliced onions. Stir occasionally until carmelized. Then add in zuchinni, mushrooms, chopped tomatoes, tomato paste, and water. Stir occasionally until zuchinni and mushrooms are tender, about 10 mins. Turn off the stove and mix in spinach to the hot contents.

Next, cut off the very tops of the bell peppers and clean out all seeds and excess skin from the inside. Stuff the peppers with the filling that you made you just made. Place in the oven and broil on low for about 10 mins. Keep an eye on your peppers to make sure the tops don't burn, you just want them to start to brown. If youd like serve with some cheese for extra flavor! You can even put the cheese on just before you broil the peppers for a crunchy top.

Serves 4

Eggplant & Zucchini

*Use organic ingredients

2 whole eggplants cut into 1/4" slices
2 zucchinis cut into slices
1 can of tomato paste
1 can of diced tomatoes
1 whole onion
4 garlic cloves
1 tbsp oregano
1 tbsp no salt mixed seasoning
1/2 handful of basil leaves, chopped
3 tbsp Extra Virgin Olive oil

Salt and Pepper to taste



Lightly brush eggplant slices with olive oil and sautee until brown and soft. Set aside in your oven to keep warm. Adding a little olive oil to the same sauce pan, sautee onions and garlic until carmelized, then add in zuchinni slices, diced tomatoes, and tomato paste. Add in seasoning and oregano. Top with basil leaves and parmesan cheese if desired. Very similar to our Eggplant Parmesan recipe and can easily be baked all together to get the eggplant softer. Enjoy!

Serves 4-6

Berrygrape Juice

*Use organic ingredients
6 Gala Apples
1 Cup of fresh blackberries
1 1/2" of Ginger root
5-6 cups of red seedless grapes
Juice all produce to your juicers instructions, and enjoy! Great to juice to mix in your fruit smoothies for some add flavor and vitamins. 

If you don't have a juicer, you can blend these ingredients together for a great smoothie, add about 1 cup of apple or orange juice to the ingredients above.

Makes a pitcher full


Spinach Berry Smoothie


*Use organic ingredients


1 cup of fresh squeezed orange juice
1 banana
1 large handful of fresh spinach
1 cup of frozen berries


Blend, and serve! So many vitamins in one drink and so much yummy flavor.

Orange Treats


Here are two great recipes that are filled with oranges and don't forget, awesome vitamins!

Organic Orange Sorbet
*Use organic ingredients


20 oranges fresh squeezed
2 peaches chopped into bite size pieces
1/4 pineapple chopped into bite size pieces

Place juice and sliced fruit in a ice cream maker for some tangy and sweet sorbet. Easy :)


Orange Tonic
*Use organic ingredients


6 oranges
3 grapefruit
6 carrots
1 1/2" of ginger
5 Red apples

Place in your juicer according to your juicers instructions and enjoy!
